20 Min Toddler Dinners That Make Great Leftovers

The combo of jam-packed weekends, hot kitchen, and preferred time spent with my kids outside than at the grocery store had got us in a major meal rut. While it’s ok for a week or so, I notice my kids’ sleep and attitude really shifts (for the worse) when their diet shifts to pickup and sugar town.
These recipes are super easy to make, involve minimal ingredients (= less time shopping) and keep really well in a lunch box.
“Monster Pancakes”
There are a few recipes for this floating around the internet but I have (in my opinion) perfected these guys to freeze well. My kids INHALE these and I make them for dinner as a fun “breakfast for dinner” Deal with eggs and pack/freeze the rest.
Ingredients:
1 cup oats
2 very ripe bananas
A half bag of spinach
3/4 cup unsweetened almond milk (use any milk just not full-fat dairy)
1 cup oats
2 teaspoons baking powder
1 teaspoon vanilla
Dash of cinnamon
2 eggs
Method:
- Blend oats in a blender until it has flour consistency.
- Add the rest of the ingredients to the blender and blend
- Heat a skillet and cook like regular pancakes
Trader Joe’s Cauliflower “Fake Fried Rice”
A healthier version of fried rice my kids love. The eggs add protein. If your kids like broccoli add some more in as a bonus ;).
*Tip - this really only keeps well for one or two days so I do one next day lunch and a repeat dinner side (#lazy).
Ingredients:
1. bag trader joe's frozen cauliflower rice
- 3 organic Eggs
- 2-4 tablespoons Braggs liquid aminos
Bonus: Broccoli
Heat a skillet and add a little olive oil to the pan. Meanwhile - microwave serving of cauliflower rice for a minute or two. Add cauliflower rice and a little liquid aminos to the mixture and keep cooking. While the rice is almost cooked (starting to crisp a bit) and in the eggs, cook!
(Add broccoli a few minutes before eggs if using ).
Pizza Egg Cups
- 1 cup diced onions or green pepper (I buy pre-chopped)
- ¼ Rao's homemade pizza sauce
- 7 organic eggs
- Applegate Turkey pepperonis
Method:
-preheat to 350 degrees
-on the stove saute diced veggies with a little olive oil for a few minutes. Add in pizza sauce and stir.
-in a bowl whisk the eggs and add salt to taste
-Place pepperoni in the bottom of muffin tins to hold toppings.
-add diced veggies and sauce to tins until they are about halfway full.
-top tins with egg mixture
-bake for 12 minutes or until eggs are set and no longer jiggle.
